Once you have completed a full day of smoking you have to have some dessert. Sustain temperature at 200 to 220° F.
Rub the bananas with a thin coating of oil.
Place the bananas in the smoker and cook for 50 to 60 minutes, until the bananas are deeply browned and soft. Remove from the smoker and set them aside to cool until cool enough to handle. Peel the bananas and slice them. Serve warm, topped with a simple sprinkle of brown sugar and cinnamon or a few spoonfuls of your favorite carmel sauce.
