Honky Tonk Pig Camp Potatoes

  • 4 lbs. Russett potatoes
  • 2 lb onions
  • 1½ cups Extra Virgin Olive Oil
  • 3 tbsp garlic powder
  • 4 tbsp kosher salt
  • Black pepper to taste

    Slice potatoes into ¼" rounds. Peel and slice onions into rings or quarters.

    Place all in large foil pan. Add oil, garlic, salt and pepper and toss to coat all pieces thoroughly. Cover tightly with foil, cook for 20 to 30 minutes over direct heat, 1½ to 2 hours in offset smoker. Stir occasionally.

    Variations:

  • Add mozzarella and/or cheddar cheese
  • Add sliced green peppers
  • Add cooked Italian or Bratwurst sausages, sliced or crumbled
  • Add cooked hamburger meat
