Honky Tonk Pig Pit Beans

  • 1 pound dried pinto beans
  • 2 cups minced yellow onions
  • 1 cup chopped bacon (raw)
  • ¼ cup chili powder
  • ½ cup Honky Tonk Pig Spicy BBQ Sauce
  • 1 tablespoon kosher salt
  • 1 cup diced tomatoes
  • 1 tablespoon habenero pepper (optional)

    Wash the beans and sort through them to remove any foreign particles and broken beans.

    Put the beans in a large bowl or saucepan and cover with cool water at least 3 inches. Soak beans overnight.

    Drain and rinse the beans and put them in a large saucepan. Add onions, bacon, chili powder, and salt and cover with cool water by 3 inches. Bring the beans to a boil, then lower heat and simmer, stirring occassionally, for 2 hours, until the beans are tender. About 2 hours before the beans are ready, add tomatoes and habenero pepper.

    During the cooking process you may need to add water to the beans if necessary.
